Roasted Rainbow Vegetable Bake with Feta & Herbs

This colorful roasted vegetable dish is packed with sweet, savory flavors and makes a beautiful side dish or light vegetarian main course. The combination of zucchini, sweet potatoes, tomatoes, red onion, herbs, feta, and a rich garlic-herb oil gives it the same rustic, Mediterranean-style appearance as the dish in your photo.

🛒 Ingredients

Vegetables

  • 2 medium zucchini
  • 2 medium sweet potatoes
  • 2 large tomatoes
  • 1 red onion
  • 1 small eggplant
  • 2–3 cloves garlic
  • 100 g feta cheese, crumbled
  • 2 tbsp fresh rosemary or thyme
  • 2 tbsp fresh parsley, chopped

Seasoning

  • 4 tbsp extra-virgin olive oil
  • 1 tsp dried oregano
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp freshly ground black pepper
  • 1 tbsp lemon juice

Optional

  • 2 tbsp dried cranberries or pomegranate seeds
  • A pinch of chili flakes
  • 2 tbsp grated Parmesan

👩‍🍳 Instructions

1. Prepare the vegetables

Preheat your oven to 200°C (400°F).

Wash and dry all the vegetables.

Slice the zucchini, sweet potatoes, tomatoes and eggplant into fairly thin rounds, approximately ½–1 cm thick.

Slice the red onion into thin wedges.

Try to keep the vegetable slices approximately the same thickness so they cook evenly.

2. Make the herb dressing

In a small bowl, combine:

  • Olive oil
  • Minced garlic
  • Oregano
  • Paprika
  • Salt
  • Black pepper
  • Lemon juice
  • Half of the chopped rosemary or thyme

Mix well.

3. Arrange the vegetables

Lightly grease a round or oval baking dish.

Arrange the vegetable slices vertically or slightly tilted, alternating them:

zucchini → sweet potato → tomato → eggplant → onion

Continue until the entire dish is filled.

This alternating arrangement is what gives the dish its beautiful rainbow appearance.

If some slices are larger than others, simply cut them in half or place smaller pieces around the edges.

4. Add the seasoning

Drizzle the garlic-herb olive oil generously over the vegetables.

Use a pastry brush or your fingers to spread the seasoning over the tops of the vegetables.

Sprinkle with the remaining rosemary or thyme.

For a little heat, add a pinch of chili flakes.

5. Cover and bake

Cover the dish loosely with aluminum foil.

Bake at 200°C (400°F) for about 35 minutes.

The foil helps the vegetables steam and become tender without drying out.

6. Finish roasting

Remove the foil and continue baking for another 20–30 minutes.

The vegetables should become beautifully roasted around the edges, while the sweet potatoes should be fork-tender.

If you want a deeper golden-brown finish, increase the oven temperature to 220°C (425°F) for the final 5–10 minutes.

7. Add feta

Remove the dish from the oven and immediately sprinkle the crumbled feta over the top.

Add fresh parsley and a little extra rosemary.

For a dish resembling the photo even more closely, scatter a few pomegranate seeds or dried cranberries over the center.

Let the dish rest for about 5–10 minutes before serving.

🌿 Serving Suggestions

Serve this roasted vegetable bake warm as a side dish alongside grilled chicken, roasted fish or steak.

It can also be served as a vegetarian main course with:

  • Crusty sourdough bread
  • Couscous
  • Quinoa
  • Rice
  • A simple green salad
  • Greek yogurt or tzatziki

For extra richness, drizzle a little extra-virgin olive oil over the finished dish just before serving.

⭐ Pro Tips

Don’t slice the vegetables too thin. Very thin slices can become mushy before the sweet potatoes are fully cooked.

Season between the layers. Don’t rely only on the oil poured over the top. A little seasoning brushed onto the vegetables gives much better flavor.

Use vegetables of different colors. Yellow squash, red bell pepper, purple onion and carrots can also be added to make the dish even more colorful.

For a creamy finish: Add small pieces of goat cheese instead of feta.

For a Mediterranean twist: Add Kalamata olives and a few spoonfuls of tomato sauce underneath the vegetables.

For extra caramelization: Sprinkle a small amount of Parmesan over the vegetables during the final 10 minutes of baking.
