Ingredients

For the casserole

  • 1 kg Yukon Gold or Russet potatoes, peeled
  • 2 large leeks, cleaned and sliced
  • 3 garlic cloves, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt, to taste
  • Freshly ground black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon onion powder
  • ½ teaspoon nutmeg (optional)

For the cream sauce

  • 500 ml heavy cream
  • 200 ml whole milk
  • 200 g shredded mozzarella
  • 150 g Gruyère or Emmental cheese, grated
  • 50 g Parmesan cheese, grated
  • 1 tablespoon Dijon mustard (optional)

Garnish

  • Fresh parsley, chopped
  • Extra Parmesan cheese

Instructions

Step 1: Prepare the vegetables

Preheat your oven to 190°C (375°F).

Peel the potatoes and slice them into thin rounds, about 3–4 mm thick.

Wash the leeks thoroughly to remove any grit, then slice them into thin rings.

Step 2: Cook the leeks

Heat the butter and olive oil in a large skillet.

Add the sliced leeks.

Cook over medium heat for about 8 minutes until soft.

Stir in the garlic.

Cook for another minute until fragrant.

Season with:

  • Salt
  • Black pepper
  • Thyme
  • Onion powder
  • Nutmeg

Remove from the heat.

Step 3: Prepare the cream mixture

In a bowl combine:

  • Heavy cream
  • Milk
  • Dijon mustard
  • Half of the mozzarella
  • Half of the Gruyère
  • Half of the Parmesan

Mix until combined.

Step 4: Assemble the casserole

Grease a baking dish with butter.

Arrange one layer of potato slices.

Spread some of the cooked leeks over the potatoes.

Pour a little cream mixture over the layer.

Repeat until all ingredients have been used.

Finish with the remaining cheese on top.

Step 5: Bake

Cover the dish loosely with foil.

Bake for 45 minutes.

Remove the foil.

Continue baking for another 20–25 minutes until:

  • The potatoes are tender
  • The cheese is golden
  • The sauce is bubbling

If needed, broil for the last 2–3 minutes for extra color.

Step 6: Rest

Allow the casserole to rest for 10–15 minutes before serving.

This helps the creamy sauce thicken and makes slicing much easier.

Tips for Success

  • Slice the potatoes evenly using a mandoline for consistent cooking.
  • Wash leeks thoroughly, as sand often hides between the layers.
  • Gruyère gives a wonderful nutty flavor, but cheddar or Swiss cheese also work well.
  • Don’t skip the resting time after baking.
  • For extra richness, add a little cream cheese to the sauce.

Delicious Variations

Try adding:

  • Crispy bacon
  • Cooked ham
  • Shredded chicken
  • Mushrooms
  • Spinach
  • Broccoli florets
  • Caramelized onions
  • Fresh rosemary
  • Chives
  • Smoked paprika

Storage

Refrigerate leftovers in an airtight container for up to 4 days.

Reheat in the oven at 180°C (350°F) until warmed through, or microwave individual portions.

The casserole can also be frozen for up to 2 months. Thaw overnight in the refrigerator before reheating.
