Sticky Brown Sugar Smoked Sausage Bites

Ingredients

  • 2 lbs (900 g) smoked sausage or kielbasa
  • 1 cup packed brown sugar
  • ½ cup unsalted butter
  • 1 tablespoon Dijon mustard (optional)
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon black pepper
  • Pinch of cayenne pepper (optional, for heat)

Instructions

Step 1: Preheat the Oven

Preheat your oven to 375°F (190°C).

Line a baking sheet or baking dish with aluminum foil for easy cleanup.

Step 2: Slice the Sausage

Cut the smoked sausage into ½-inch (1.25 cm) thick rounds.

Spread them in a single layer on the prepared baking sheet.

Step 3: Make the Glaze

In a small saucepan over medium heat, melt the butter.

Stir in:

  • Brown sugar
  • Garlic powder
  • Onion powder
  • Smoked paprika
  • Black pepper
  • Dijon mustard (if using)

Cook for 2–3 minutes until the sugar dissolves and the mixture is smooth.

Step 4: Coat the Sausage

Pour the glaze evenly over the sausage slices.

Gently toss to coat every piece.

Step 5: Bake

Bake for 20 minutes.

Remove from the oven and stir the sausage so each piece gets coated in the bubbling glaze.

Return to the oven for another 10–15 minutes, or until the glaze is thick, sticky, and caramelized.

Step 6: Serve

Let the sausage bites rest for 5 minutes before serving.

Serve warm as an appetizer, party snack, or main dish with rice, mashed potatoes, or roasted vegetables.

Optional Variations

  • Add pineapple chunks for a sweet-and-savory twist.
  • Sprinkle with sesame seeds after baking.
  • Garnish with chopped parsley or green onions.
  • Add a splash of maple syrup for extra richness.
  • Mix in a teaspoon of hot sauce for sweet heat.

Tips for the Best Results

  • Use smoked sausage or kielbasa for the best flavor.
  • Avoid overcrowding the pan so the sausage caramelizes instead of steaming.
  • Stir halfway through baking to evenly coat the pieces.
  • For crispier edges, broil for the last 2–3 minutes, watching carefully to prevent burning.

This recipe serves 6–8 people and takes about 40 minutes from start to finish.
