Homemade Fresh Watermelon Juice (Bottled)
Nothing says summer quite like a glass of fresh watermelon juice. Naturally sweet, incredibly refreshing, and packed with hydration, this drink is perfect for hot afternoons, family gatherings, or simply enjoying a healthy homemade beverage. Unlike many store-bought fruit drinks, this recipe uses fresh ingredients and lets the natural flavor of watermelon shine.
This recipe produces a smooth, vibrant pink juice similar to the one shown in the image. It can be enjoyed immediately over ice or gently pasteurized and bottled for short-term storage in the refrigerator.
Preparation Time
- Prep Time: 20 minutes
- Cook Time (optional pasteurizing): 10 minutes
- Total Time: 30 minutes
Yield: About 2 liters (8–10 servings)
Ingredients
- 2 kg (about 4½ pounds) seedless watermelon, cubed
- ½ cup granulated sugar (optional, depending on the sweetness of the melon)
- Juice of 2 fresh lemons
- 2 cups cold water
- 1 teaspoon vanilla extract (optional, for a subtle aroma)
- Pinch of salt
- Ice cubes for serving
Equipment
- Blender
- Fine mesh strainer
- Large saucepan
- Funnel
- Sterilized glass bottles
- Large bowl
- Wooden spoon
Step 1: Choose the Right Watermelon
The quality of your watermelon determines the quality of your juice. Look for one that feels heavy for its size, has a creamy yellow field spot, and sounds hollow when tapped. A ripe watermelon is naturally sweet and juicy, reducing the need for added sugar.
Wash the outside thoroughly before cutting to avoid transferring dirt or bacteria to the flesh.
Step 2: Prepare the Fruit
Slice the watermelon into manageable sections. Remove the rind and any large black seeds if necessary. Cut the flesh into cubes.
You should have around 8 cups of watermelon cubes.
Step 3: Blend Until Smooth
Place the watermelon cubes into a blender. Add the cold water and blend for 1–2 minutes until completely smooth.
If your blender is small, blend in batches.
Step 4: Strain the Juice
Pour the blended mixture through a fine mesh sieve into a large bowl or pitcher.
Use the back of a spoon to press the pulp and extract as much liquid as possible.
For a thicker drink, skip this step.
Step 5: Add Flavor
Stir in:
- Lemon juice
- Sugar (if needed)
- Pinch of salt
- Vanilla extract (optional)
Taste the juice and adjust the sweetness or acidity to your preference.
Step 6: Optional Pasteurizing
If you plan to bottle the juice for a few days of refrigerated storage, gently heat it.
Pour the juice into a saucepan and warm over medium-low heat. Do not boil it vigorously, as this can dull the fresh watermelon flavor. Heat until it reaches about 75–80°C (167–176°F) and maintain that temperature for about 5 minutes, stirring occasionally.
Remove from the heat and allow it to cool slightly.
Step 7: Bottle the Juice
Sterilize glass bottles by boiling them in water for 10 minutes or washing them in a dishwasher with a sanitizing cycle.
Using a funnel, carefully pour the warm juice into the bottles, leaving about 1–2 cm (½ inch) of headspace.
Seal the bottles immediately with clean lids.
Allow them to cool completely before refrigerating.
Serving Suggestions
Serve chilled over ice. Garnish with:
- Fresh mint leaves
- Thin watermelon wedges
- Lemon slices
- Lime wedges
For a sparkling version, replace some of the water with chilled sparkling water just before serving.
Flavor Variations
Mint Watermelon Juice
Blend a handful of fresh mint leaves with the watermelon for an extra-refreshing twist.
Strawberry Watermelon Juice
Add 1 cup of fresh strawberries before blending for a sweeter, berry-flavored drink.
Tropical Watermelon Juice
Blend in 1 cup of pineapple chunks for a tropical flavor.
Ginger Watermelon Juice
Add 1 teaspoon of freshly grated ginger for a zesty kick.
Cucumber Watermelon Cooler
Blend half a peeled cucumber with the watermelon for an ultra-hydrating beverage.
Tips for the Best Juice
- Use a fully ripe watermelon for maximum sweetness.
- Chill the watermelon before blending so the juice is naturally cold.
- Adjust the sugar to taste—many ripe watermelons don’t need any added sugar.
- Add lemon juice to brighten the flavor and help preserve the color.
- For a smoother texture, strain twice through a fine sieve or cheesecloth.
Storage
Fresh watermelon juice is best enjoyed the same day, but it can be stored in the refrigerator in a sealed container for up to 3 days.
If pasteurized and bottled in sterilized bottles, it may last 5–7 days in the refrigerator. Always discard the juice if it develops an off smell, unusual taste, or signs of fermentation.
