Ingredients:
For the Shrimp Scampi:
1 lb large shrimp, peeled and deveined
4 tbsp butter
4 cloves garlic, minced
½ tsp red pepper flakes (optional)
½ cup white wine (or chicken broth)
Juice of 1 lemon
2 tbsp fresh parsley, chopped
Salt and pepper to taste
For the Ricotta Mixture:
1 cup ricotta cheese
½ cup Parmesan cheese, grated
1 egg
1 tsp Italian seasoning
Salt and pepper to taste
For the Sauce:
3 tbsp butter
3 tbsp flour
2 cups heavy cream (or whole milk)
1 cup Parmesan cheese, grated
½ tsp garlic powder
Salt and pepper to taste
For Assembly:
9 lasagna noodles, cooked al dente
2 cups mozzarella cheese, shredded
Instructions:
- Cook the Shrimp Scampi:
- In a large pan, melt 4 tbsp butter over medium heat.
- Add garlic and red pepper flakes; sauté for 30 seconds until fragrant.
- Add shrimp, season with salt and pepper, and cook for 2-3 minutes per side until pink.
- Pour in white wine and lemon juice; let it simmer for 1-2 minutes.
- Stir in parsley and remove from heat. Set shrimp aside.
- Make the Ricotta Mixture:
- In a bowl, mix ricotta, Parmesan, egg, Italian seasoning, salt, and pepper. Set aside.
