- 1 tsp vanilla
Optional top layer
You can leave plain OR add:
- extra shortbread dough crumble
- chocolate drizzle
- or full chocolate layer

- 9×9 or 9×13 baking pan
- parchment paper

Step-by-Step Instructions
Step 1 – Prepare the pan
Line your pan with parchment paper.
Leave edges hanging.
This helps lift bars easily later.
Preheat oven to 180°C (350°F).
Make the shortbread crust
Step 2 – Mix dough
In a bowl combine:
- flour
- powdered sugar
- salt
Add cold butter cubes.
Rub butter into flour using fingers or pastry cutter.
Keep mixing until texture looks like wet sand.
When pressed, it should hold together.
Add vanilla.
Don’t overwork.
Shortbread should stay crumbly.
Step 3 – Press base
Take ⅔ of the dough.

In saucepan, add:
- butter
- brown sugar
- white sugar
- condensed milk
- honey
- salt
Cook on medium heat.
Stir constantly.
Important: don’t stop stirring or it may burn.
After 6–8 minutes it will:

✔ darken slightly
✔ become smooth
✔ coat the spoon
When it looks like thick pudding → ready.
Turn off heat.
Add vanilla.
Step 5 – Pour caramel
Pour hot caramel over baked crust.
Spread evenly.
Tap pan to level.
It should look thick and glossy.

Add top layer
Step 6 – Crumble dough on top
Take remaining shortbread dough.
Crumble small pieces over caramel.
Don’t fully cover.
Let caramel peek through for that rustic look like your photo.
Step 7 – Bake again
Return to oven.
Bake 18–22 minutes until:

✔ edges slightly crisp
✔ caramel bubbling gently
Remove from oven.
Step 8 – Cool completely (VERY important)
Let cool:
- room temperature 30–40 minutes
- fridge at least 2 hours
If you cut warm → caramel flows everywhere.
Cold = perfect clean slices.

Step 9 – Slice
Lift using parchment.
Place on board.
Use sharp knife.
Clean knife between cuts.
Slice into squares or bars.
