Banana Pudding Cookies Delight Recipe

A soft, chewy cookie with all the comforting flavors of banana pudding!

Ingredients:

  • 1 cup mashed ripe bananas
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup softened butter
  • 1/4 cup vanilla pudding mix
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup vegan mini marshmallows
  • 1/2 cup chocolate chips (optional)
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped walnuts (optional)

Instructions:

  1. Preheat Oven: Set to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream Butter & Sugars: In a large bowl, beat softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add Wet Ingredients: Mix in the mashed bananas and vanilla extract until smooth.
  4. Mix Dry Ingredients: In a separate bowl, whisk together flour, vanilla pudding mix, baking soda, and salt.
  5. Combine: Gradually add dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in Extras: Gently fold in mini marshmallows, chocolate chips, and walnuts (if using).
  7. Scoop & Bake: Drop spoonfuls onto the baking sheet, spacing them 2 inches apart.
  8. Bake: Bake for 10-12 minutes or until edges are golden. Centers may be soft but will firm up as they cool.
  9. Cool & Enjoy: Let cool on the baking sheet for 5 minutes, then transfer to a wire rack.
