Banana Pudding Cookies Delight Recipe
A soft, chewy cookie with all the comforting flavors of banana pudding!
Ingredients:
- 1 cup mashed ripe bananas
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup softened butter
- 1/4 cup vanilla pudding mix
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup vegan mini marshmallows
- 1/2 cup chocolate chips (optional)
- 1/2 teaspoon vanilla extract
- 1/4 cup chopped walnuts (optional)
Instructions:
- Preheat Oven: Set to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream Butter & Sugars: In a large bowl, beat softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add Wet Ingredients: Mix in the mashed bananas and vanilla extract until smooth.
- Mix Dry Ingredients: In a separate bowl, whisk together flour, vanilla pudding mix, baking soda, and salt.
- Combine: Gradually add dry ingredients to the wet mixture, stirring until just combined.
- Fold in Extras: Gently fold in mini marshmallows, chocolate chips, and walnuts (if using).
- Scoop & Bake: Drop spoonfuls onto the baking sheet, spacing them 2 inches apart.
- Bake: Bake for 10-12 minutes or until edges are golden. Centers may be soft but will firm up as they cool.
- Cool & Enjoy: Let cool on the baking sheet for 5 minutes, then transfer to a wire rack.
