Grilled Steak Elote Tacos
Juicy grilled steak, creamy elote (Mexican street corn), and fresh toppings—these tacos are bursting with flavor! What’s your must-have taco topping?
Ingredients :
For the Steak:
1 lb flank steak (or skirt steak)
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon cumin
1 teaspoon chili powder
2 cloves garlic, minced
Juice of 1 lime
2 tablespoons olive oil
For the Elote (Mexican Street Corn):
2 ears corn, grilled and cut off the cob
¼ cup mayonnaise
¼ cup crumbled cotija cheese (or feta)
½ teaspoon chili powder
Juice of ½ lime
1 tablespoon chopped cilantro
For the Tacos:
8 small corn tortillas
Sliced avocado (optional)
Extra cilantro for garnish
Additional cotija cheese
Instructions :
Marinate the Steak:
In a bowl, mix salt, pepper, cumin, chili powder, garlic, lime juice, and olive oil.
Rub over the steak and let marinate for at least 30 minutes.
Grill the Steak & Corn:
Heat a grill or skillet over high heat. Grill steak for 4-5 minutes per side for medium-rare (or longer for desired doneness). Let rest before slicing.
Grill corn until charred, then cut off the cob.
Prepare the Elote:
In a bowl, mix grilled corn, mayonnaise, cotija cheese, chili powder, lime juice, and cilantro.
Assemble the Tacos:
Warm tortillas, then layer with sliced steak and elote mixture.
Top with avocado, extra cotija cheese, and cilantro.
Serve & Enjoy:
Squeeze fresh lime juice over the top and dig in!
