Fluffy Homemade Pancakes

Ingredients

Dry Ingredients

  • 1 ½ cups all-purpose flour
  • 3 tbsp sugar
  • 1 tbsp baking powder
  • ½ tsp salt

Wet Ingredients

  • 1 ¼ cups milk
  • 1 large egg
  • 3 tbsp melted butter (plus more for cooking)
  • 1 tsp vanilla extract

Instructions

1. Mix the Dry Ingredients

In a bowl, whisk together the flour, sugar, baking powder, and salt.

This step ensures the pancakes rise well and stay fluffy.

2. Mix the Wet Ingredients

In a separate bowl, whisk together milk, egg, melted butter, and vanilla.

Make sure the butter is melted but not too hot, or it can cook the egg.

3. Combine Wet & Dry Mixtures

Pour the wet mixture into the dry mixture.

Gently stir with a whisk or spatula until just combined.

Important:

Do not overmix. A few small lumps are normal and help the pancakes stay fluffy.

4. Let the Batter Rest

Let the batter sit for 5–10 minutes.

This allows the baking powder to activate, making the pancakes rise beautifully like the ones in the photo.

5. Cook the Pancakes

  1. Heat a non-stick pan or griddle over medium heat.
  2. Add a little butter to the pan.
  3. Pour about ¼ cup of batter for each pancake.
  4. Cook until bubbles form on top and the edges start to set.
  5. Flip and cook the other side until golden brown.

Your pancakes should be soft, thick, and fluffy with a gorgeous golden color.

6. Serve

Serve warm with:

  • Maple syrup
  • Whipped cream
  • Fresh berries
  • Honey
  • Chocolate spread
  • Butter

Or enjoy them plain — they’re delicious on their own.
