Ingredients
- 1 cup (225g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 2 large eggs
- 2 tbsp fresh lemon juice
- 1 tbsp lemon zest
- 1 tsp vanilla extract
- 2 ½ cups (310g) all-purpose flour
- 1 ½ tsp baking powder
- ¼ tsp salt
- 1 cup powdered sugar (for coating)
Instructions
1. Prepare the dough
In a large bowl, beat the softened butter and sugar until creamy and fluffy.
Add eggs one at a time, mixing well.
Mix in lemon juice, lemon zest, and vanilla extract.
2. Add dry ingredients
In another bowl, whisk together flour, baking powder, and salt.
Gradually add this dry mixture into the wet mixture until you get a soft dough.
3. Chill the dough
Cover the bowl and refrigerate for at least 30–45 minutes.
This helps the cookies keep their shape and stay soft inside.
4. Shape the cookies
Scoop tablespoon-sized balls of dough.
Roll each ball in plenty of powdered sugar until fully covered.
5. Bake
Place on a baking tray lined with parchment paper, leaving space between cookies.
Bake at 180°C (350°F) for 10–12 minutes.
They should be soft and lightly golden on the bottom — don’t overbake.
6. Coat again
While still warm, roll or dust the cookies with a second layer of powdered sugar for that thick snowy look.
Tips for Perfect “Snow” Cookies
- For stronger lemon flavor, add a few extra drops of lemon extract.
- If the dough is too sticky, chill longer.
- Powder the cookies generously — that’s what gives the snowy finish.
