Creamy Spinach Cheese Meatballs

A super comforting meal made with tender meatballs baked in a creamy garlic–spinach sauce and topped with melted cheese.


✅ INGREDIENTS

For the Meatballs

500 g ground chicken or turkey (or beef/pork mix)

1 small onion, finely chopped

2–3 garlic cloves, minced

½ cup breadcrumbs

1 egg

¼ cup grated Parmesan

¼ cup fresh parsley, chopped

1 tsp salt

½ tsp black pepper

1 tsp paprika

½ tsp dried oregano

For the Creamy Spinach Sauce

2 tbsp butter

3–4 garlic cloves, minced

1½ cups heavy cream

½ cup chicken broth

1 cup mozzarella cheese, shredded

1 cup fresh spinach, chopped

¼ cup Parmesan cheese

½ tsp chili flakes (optional)

Salt & pepper to taste

Topping

Extra mozzarella or cheese blend (about ½ cup)


🔥 INSTRUCTIONS

  1. Prepare the Meatballs
  2. In a large bowl, combine:

ground meat

chopped onion

minced garlic

breadcrumbs

egg

Parmesan

parsley

seasonings

  1. Mix gently with your hands until everything is combined.
  2. Form balls (about golf-ball size) and place them on a baking tray lined with foil.
  3. Bake at 400°F (200°C) for 12–15 minutes until lightly browned on top.

  1. Make the Creamy Sauce
  2. Heat butter in a pan.
  3. Add the minced garlic and sauté for 30 seconds until fragrant.
  4. Pour in the heavy cream and chicken broth.
  5. Stir and let it simmer until slightly thickened.
  6. Add chopped spinach and cook for 1–2 minutes.
  7. Add Parmesan and half the mozzarella, stirring until melted.
  8. Taste and season with salt, pepper, and chili flakes if you like heat.

  2. Place the baked meatballs into a baking dish.
  3. Pour the creamy spinach sauce all over them.
  4. Top with extra mozzarella cheese.
  5. Bake again at 400°F (200°C) for 10–12 minutes, or until the cheese is golden and bubbly.
