Flaky Apple Slab Pie

This dessert looks exactly like a rustic bakery-style apple pie baked in a tray, with golden flaky crust and tender apple chunks inside. It’s perfect for parties, large families, or holiday gatherings.

Ingredients

For the crust

  • 2 ready-made puff pastry sheets or
    homemade pie crust (2 layers)
  • 1 egg (for egg wash)

For the apple filling

  • 6–7 large apples (peeled and sliced)
  • 1 cup sugar
  • 1 tbsp lemon juice
  • 2 tbsp butter
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg (optional)
  • 2 tbsp cornstarch (to thicken)
  • Pinch of salt

Instructions

1. Prepare the Apple Filling

  1. In a large pot, add sliced apples, sugar, butter, lemon juice, cinnamon, nutmeg, salt.
  2. Cook on medium heat for 10–12 minutes until apples soften slightly.
  3. Mix cornstarch with 3 tbsp water, then add it to the apples.
  4. Cook 2 more minutes until the filling thickens.
  5. Let the mixture cool completely.

This cooling step prevents the puff pastry from getting soggy.

2. Prepare the Crust

  1. Preheat oven to 200°C (400°F).
  2. Roll out one puff pastry sheet to fit your rectangular baking tray.
  3. Press it gently into the pan, letting the edges come up over the sides.

3. Add the Apple Filling

  1. Pour the cooled apple mixture over the bottom crust.
  2. Spread evenly.
  3. The filling should look chunky and juicy—just like in the picture.

4. Add the Top Layer

  1. Roll the second puff pastry sheet.
  2. Lay it gently on top of the apples.
  3. Press the edges together to seal and create a rustic border.
  4. Brush with egg wash for a shiny golden color.
  5. Use a knife to cut long slits across the surface — this allows the steam to escape and creates the signature look from your image.

5. Bake

Bake for 25–35 minutes, or until:

  • the crust is golden brown
  • the filling bubbles through the slits
  • the sides are crisp and flaky

6. Cool and Serve

Allow the slab pie to cool for at least 20 minutes so it sets before cutting.

Cut into long strips or squares—just like in your picture—and serve warm or at room temperature.
