Carrot Cake Roll with Cream Cheese Filling

Ingredients

For the Carrot Cake Roll

  • 3 large eggs
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 tbsp vegetable oil
  • ¾ cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp nutmeg
  • 1 ½ cups finely grated carrots

For the Cream Cheese Filling

  • 1 cup cream cheese, softened
  • 4 tbsp butter, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

1. Prepare Your Pan

Line a baking sheet (10×15 inch) with parchment paper.

Lightly grease the top of the parchment so the cake releases easily later.

2. Make the Carrot Cake Batter

In a mixing bowl:

  1. Beat eggs, sugar, vanilla, and oil until creamy and pale.
  2. In another bowl, whisk the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Combine the dry mixture with the wet mixture.
  4. Fold in the grated carrots gently.

Pour the batter evenly into your lined baking sheet.

3. Bake the Cake

Bake at 180°C (350°F) for 10–12 minutes, just until the top springs back when touched.

Don’t overbake, or it will crack when rolling.

4. Roll the Cake While Hot (Very Important Step!)

This step gives the cake its perfect spiral.

  1. Lay a clean towel on your counter.
  2. Sprinkle it lightly with powdered sugar.
  3. Flip the hot cake onto the towel, peel off the parchment paper.
  4. Starting from the short end, roll the cake up with the towel inside.

Let it cool completely in the rolled shape.

5. Prepare the Cream Cheese Filling

Beat together:

  • cream cheese
  • butter
  • powdered sugar
  • vanilla

Beat until smooth, creamy, and fluffy.

6. Fill the Cake Roll

When the cake is completely cool:

  1. Gently unroll it.
  2. Spread the cream cheese filling evenly over the cake.
  3. Roll it back up — this time without the towel.

Wrap in plastic wrap and refrigerate for at least 1 hour for clean slices.

7. Serve

Slice into spirals just like in the picture.

Dust with powdered sugar if you like.

Tips for a Perfect Carrot Cake Roll

  • Grate the carrots finely to avoid lumps in the roll.
  • Roll the cake while hot to prevent cracking.
  • Chill before slicing for the cleanest swirl.
  • Add chopped walnuts or raisins if you like extra texture.
