Apple & Blueberry Custard Cake

Ingredients

For the Cake Batter

  • 3 large eggs
  • 1 cup sugar
  • 1 cup Greek yogurt (or thick plain yogurt)
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • Pinch of salt

For the Fruit

  • 2 red apples, thinly sliced
  • 1 cup fresh or frozen blueberries
  • 1 tbsp lemon juice
  • 1 tbsp flour (to toss the blueberries so they don’t sink)

For Finishing

  • Powdered sugar (optional)
  • Extra blueberries for decoration

Instructions

1. Prepare the Pan

Line an 8×8 inch (20 cm) square baking pan with parchment paper.

Lightly grease it to prevent sticking.

2. Prepare the Apples

Wash the apples and slice them thinly.

Toss the slices with 1 tbsp lemon juice so they stay fresh and don’t turn brown.

Set aside.

3. Prepare the Blueberries

If using frozen blueberries, do NOT thaw.

Toss all blueberries with 1 tbsp flour.

This keeps them from sinking to the bottom of the cake.

4. Make the Batter

In a mixing bowl:

  1. Whisk eggs and sugar until pale and slightly fluffy.
  2. Add yogurt, oil, and vanilla. Mix well.
  3. In another bowl, combine flour, baking powder, and salt.
  4. Add dry ingredients to wet ingredients and whisk gently until smooth.

You should have a thick, creamy batter similar to custard.

5. Assemble the Cake

Pour the batter into your prepared pan.

Now arrange the fruit:

  1. Press the apple slices into the top in a fan or sunburst pattern (like in your photo).
  2. Sprinkle blueberries between the apple slices and around the top.

Gently press the fruit so they settle slightly into the batter.

6. Bake

Bake in a preheated oven at 170–175°C (340°F) for:

45–60 minutes, depending on your oven.

How to know it’s ready:

  • The top should be golden.
  • A toothpick inserted into the center should come out clean.
  • The sides may pull away slightly from the pan.

7. Cool and Serve

Let the cake cool for at least 20 minutes before cutting.

It sets as it cools and becomes even creamier.

Dust with powdered sugar and add fresh blueberries on top if you like.

  • Don’t overmix the batter.
  • Use yogurt for a moist, custard-like center.
  • Slice apples thin so they bake gently into the cake.
  • Check the cake early if your oven runs hot.
