Crispy Egg-Coated French Fries

Ingredients

  • 4 large potatoes (peeled and cut into fries)
  • 1 whole egg
  • 1 tablespoon cornstarch (optional but makes them even crispier)
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • Oil for frying

Instructions

1. Prepare the potatoes

Peel the potatoes and cut them into fries.

Rinse them in cold water to remove excess starch, then pat very dry with a towel.

Dry potatoes = crispier fries.

2. Mix the egg coating

Crack one whole egg into a bowl.

Add salt, paprika, garlic powder, and cornstarch.

Whisk until smooth.

The egg creates a thin coating that helps the fries crisp beautifully, just like in your second image.

3. Coat the fries

Place the raw, dry fries into a large bowl.

Pour the egg mixture on top.

Toss well with your hands until every fry is lightly coated.

They should be glossy but not dripping.

4. Fry the potatoes

Heat oil over medium-high heat.

Add the coated fries in batches.

Fry until golden and crispy, about 7–10 minutes.

The egg coating helps them brown evenly and gives them that beautiful golden color shown in the photo.

5. Season and serve

Remove fries onto paper towels.

Season with salt or your favorite fry seasoning.

Serve hot with ketchup, mayo, or spicy sauce.

Tips for Extra Crispiness

  • Add 1 extra tablespoon of cornstarch for crunchier fries
  • Use very dry potatoes before coating
  • Don’t overcrowd the oil
  • Fry twice (optional): first at low heat, then high
