Country Ranch Green Beans ‘n Potatoes with Bacon

Ingredients:

  • 1 lb fresh green beans, trimmed
  • 2 cups baby potatoes, halved
  • 4 slices of bacon, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced

  • 1 teaspoon ranch seasoning mix
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup low-sodium chicken broth

Directions:

  1. In a large pot, bring salted water to a boil. Add the baby potatoes and cook for about 10-12 minutes until fork-tender. Add the green beans in the last 4 minutes of cooking. Drain and set aside.

  1. In a large skillet, heat the olive oil over medium heat. Add the diced bacon and cook until crispy. Remove the bacon from the skillet and set aside, leaving some drippings in the pan.

  1. In the same skillet, add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.

  1. Add the cooked potatoes and green beans back to the skillet. Sprinkle with ranch seasoning, salt, and pepper. Pour in the chicken broth and let everything simmer for about 5 minutes, allowing the flavors to blend.
  2. Stir in the crispy bacon just before serving, and adjust the seasoning if necessary.
