French Onion Ground Beef and Rice Casserole

French Onion Ground Beef and Rice Casserole

Ingredients:

1 pound ground beef
1 cup long-grain white rice
1 can (10.5 oz) French onion soup
1 can (14.5 oz) diced tomatoes, undrained
1 cup beef broth
1 medium onion, sliced
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon Worcestershire sauce
1 teaspoon dried thyme
Salt and pepper to taste
1 cup shredded Swiss cheese
Directions:

Preheat your oven to 350°F (175°C).
In a large skillet, heat the olive oil over medium heat. Add the sliced onion and sauté for about 5 minutes, or until softened. Add the minced garlic and cook for an additional minute, stirring frequently.
Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain excess fat if needed.
Stir in the French onion soup, diced tomatoes (with their juice), beef broth, Worcestershire sauce, dried thyme, salt, and pepper. Bring the mixture to a gentle simmer.
Add the rice to the skillet and stir well to combine. Cover and reduce the heat to low, letting the rice absorb the liquid for about 15 minutes.
Transfer the beef and rice mixture to a greased 9×13 inch baking dish. Spread it evenly in the dish.
Sprinkle the shredded Swiss cheese evenly over the top.
Cover the dish with aluminum foil and bake for 25 minutes.
Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
Remove from the oven and let it rest for a few minutes before serving.
