Jalapeño Popper Grilled Cheese Sandwich
Ingredients:
2 slices of bread
2 tablespoons butter, softened
2 ounces cream cheese, softened
1/4 cup shredded cheddar cheese
1/4 cup shredded mozzarella cheese
2-3 jalapeño peppers, sliced (seeds removed for less heat)
Salt and pepper to taste
Directions:
Begin by heating a skillet over medium heat. While the skillet warms up, spread butter on one side of each slice of bread.
In a bowl, combine the softened cream cheese, cheddar cheese, mozzarella cheese, and sliced jalapeños. Season the mixture with salt and pepper to taste.
Place one slice of bread, buttered side down, onto the skillet. Spread the cheese and jalapeño mixture evenly over the bread. Top with the second slice of bread, buttered side up.
Cook for about 3-4 minutes until the bottom slice is golden brown. Carefully flip the sandwich and cook for an additional 3-4 minutes, until the other side is also golden and the cheese is melted.
Once done, remove from the skillet, slice in half, and serve warm.
