Ingredients:
2 medium potatoes, peeled and diced
2 large eggs
1 tablespoon olive oil or butter
Salt and pepper to taste
1/4 teaspoon paprika (optional)
Fresh parsley for garnish (optional)
Directions:
Heat the olive oil or butter in a large skillet over medium heat.
Add the diced potatoes to the skillet and cook for 10-12 minutes, stirring occasionally, until golden brown and crispy. Season with salt, pepper, and paprika (if using).
